Just wondering, why does everyone remove the choke mechanism from the IDF's? Is it for clearance issues? Or is it because the carbs warm up quickly with the dual runner intakes we all run?
It seems like they'd fit and work, so I was just wondering why you wouldn't want them....

The enrichment Circuit is for the Fiat cars that the carbs were intended for. Not needed on the vw engine in the dual carb position. Also there would have to be some sort of cable system set up to pull on two at a time, this would be difficult.
Dual carbs tuned well run well without the choke. even single IDF carbs run well if set up for single use, At my shop we have been setting these up with different jetting to overcome the problems of single vs dual carbs, and I have been playing with manifolds and talking to other tuners to get information on there experiences and results.
This stuff can be fun , but takes alot of time..

i've heard about someone who used the heating mechanism to make the chokes work. it can work, but most of us live in a climate that doesn't need chokes and they work well enough without the chokes

Even with snow on the ground, the carbs run perfectly. I've never seen a dual carb ice up like a stocker is notorious for. You simply don't need cold weather enrichment in a VW with dual IDFs or DRLAs.
