What are some thoughts on acceptable endplay for a hot street engine? I know some guys like to run in the stock spec range of .003"-.005", and I also know people who have locked up their high perf. engines at these tighter clearances.
 I aimed for .006" on my 2332 and ended up with .007" once measured on the dial indicator. I have 3 of the thickest shims available in there already (brand new .014") so I think I may have to run what I have. I also hate the thought of breaking loose my new wedgemate. I'm running a CB crank, OE lightened flywheel (wedgemate), OE mag case and German KS bearings if that matters.
'Am I safe at this setting?

You are fine. I shoot for .005-.008". I have built motors with .009" with no issue.
However, you are correct that .003" is too tight for a heavy clutch. No oil can get in between the shims for lubrication.

Ditto, I've been running 0.006" end float for a couple of years in a 2332 cc.

I go by this:

stockers .004-.006
engines that spin up to 6500 .006-.008
engines that spin faster than 6500 (i always wedgemate these) .008-.010

You can use 4 shimms if you want, I see no problem with that.
